Berry Oatmeal Bake with Protein Powder
Berry oatmeal bake is hearty, filling, and bursting with sweet berry flavor. Given a boost of protein, it’s quick to make and great for meal prep breakfast recipe!

We eat oatmeal every week, probably every day if we’re being honest. With recipes like simple stovetop oats and microwave oats or fancier options like our carrot cake overnight oats, we never get bored.
However, in the spring and summer, this berry baked oatmeal recipe is our go-to for a quick, budget-friendly meal prep option. Naturally sweetened, it’s full of vitamins, nutrients, and fiber.
Then, we include protein powder to make it even more filling. Prepare a batch to enjoy now, and freeze extras for later. Trust us. It’s a lifesaver on busy days and will keep you full for hours!

- Berries – We use frozen mixed berries (We get the big bags from Costco!), but fresh berries also work. Use any combination of strawberries, blueberries, raspberries, or blackberries you like best.
- Protein Powder – We use plain or vanilla protein powder. Both vegan and plant-based options taste great. Just note that you may need to add more liquid, depending on what you use.
- Oats – Steel-cut or old-fashioned rolled oats work best. You can also use quick oats, but the texture will be pretty dense. Whatever you do, don’t use steel cut oats! Also, if needed, look for certified gluten-free varieties.
- Flavor Enhancers – A pinch of salt, ground cinnamon, and vanilla extract infuse the oats with a sweet, warm flavor and enhance the rest of the ingredients.
- Milk – We usually use unsweetened almond milk, but any regular or dairy-free milk will do.
- Eggs – We’ve tested this recipe with flax and chia eggs, too, and both work well. The oats just turn out dense.
- Unsweetened Applesauce – This eliminates the need for butter or oil, keeping the oats soft and moist, creating an almost cake-like consistency.
- Pure Maple Syrup – Honey will also work.
- Almonds – Technically optional, these are highly recommended for a boost of healthy fats and a satisfying crunch. If preferred, substitute walnuts or pecans.

Before you begin, preheat your oven to 350 degrees Fahrenheit and grease a 9×9 baking dish.

Ingredients
- 2 1/2 cups (400 grams) frozen berries
- 60 grams vanilla protein powder whey or vegan
- 2 cups (160 grams) old-fashioned rolled oats
- 2 teaspoons cinnamon
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 cups unsweetened almond milk
- 2 eggs
- 2 teaspoons vanilla extract
- 90 grams unsweetened applesauce
- 2 Tablespoons pure maple syrup
- 3/4 cup sliced almonds or chopped
Instructions
- Whisk the dry ingredients in a large bowl.60 grams vanilla protein powder, 2 cups (160 grams) old-fashioned rolled oats, 2 teaspoons cinnamon, 1/2 teaspoon baking soda, 1 teaspoon salt
- Add the wet ingredients to the same bowl and whisk until well combined.1 1/2 cups unsweetened almond milk, 2 eggs, 2 teaspoons vanilla extract, 90 grams unsweetened applesauce, 2 Tablespoons pure maple syrup
- Fold in the berries and nuts, if using.2 1/2 cups (400 grams) frozen berries, 3/4 cup sliced almonds
- Transfer the mixture to the prepared baking dish.
- Bake at 350 degrees for about 45-55 minutes, until the oats are set, lightly golden, and a toothpick inserted into the center comes out clean.
