Berry Oatmeal Bake with Protein Powder

Ingredients
  

  • 2 1/2 cups (400 grams) frozen berries
  • 60 grams vanilla protein powder whey or vegan
  • 2 cups (160 grams) old-fashioned rolled oats
  • 2 teaspoons cinnamon
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups unsweetened almond milk
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 90 grams unsweetened applesauce
  • 2 Tablespoons pure maple syrup
  • 3/4 cup sliced almonds or chopped

Instructions
 

  • Whisk the dry ingredients in a large bowl.
    60 grams vanilla protein powder, 2 cups (160 grams) old-fashioned rolled oats, 2 teaspoons cinnamon, 1/2 teaspoon baking soda, 1 teaspoon salt
  • Add the wet ingredients to the same bowl and whisk until well combined.
    1 1/2 cups unsweetened almond milk, 2 eggs, 2 teaspoons vanilla extract, 90 grams unsweetened applesauce, 2 Tablespoons pure maple syrup
  • Fold in the berries and nuts, if using. 
    2 1/2 cups (400 grams) frozen berries, 3/4 cup sliced almonds
  • Transfer the mixture to the prepared baking dish.
  • Bake at 350 degrees for about 45-55 minutes, until the oats are set, lightly golden, and a toothpick inserted into the center comes out clean.
  • Cool slightly. Then, slice, and getcha some of that!

Notes

Storage: Transfer leftovers to an airtight container and store them in the fridge for 4-5 days. Or, freeze for up to 3 months.
