Apple Cinnamon Overnight Oats
These apple cinnamon overnight oats are one of my favorite meal prep breakfast recipes for fall! Sweet, spiced, and filling, they’re reminiscent of apple pie but are a lot more nutritious. Every fall, we visit an apple orchard at least once, and I end up with more apples than I know what to do with. So, I get creative, using them to make cinnamon apple baked oatmeal, crockpot applesuace, and these apple overnight oats. This recipe is a particular favorite because it’s super quick to prepare and is perfect for busy mornings. I always prep several jars at once for quick breakfasts we can grab before heading out the door.

Key Ingredients and Notes
Like all our overnight oats recipes, these overnight oats with apples and cinnamon come together with just a handful of simple ingredients. Here’s what you need to know:
- Apples: I’ve tested this recipe with just about every apple variety I could find. They all work, but I prefer sweet baking apples such as Honeycrisp, Jonagold, and Fuji. They add much more flavor to the oats and balance the warmth of the spices nicely.
- Maple Syrup: This adds sweetness and a warm taste. Honey will also work, but the flavor of the oats will be more floral.
- Oats: Rolled oats, also known as old-fashioned rolled oats work best, absorbing the liquid and becoming thick and soft. Quick oats also work, though they don’t get quite as fluffy. Avoid steel-cut oats. They won’t absorb the liquid or soften the same! If needed, look for certified gluten-free oats to keep your apple cinnamon voernight oats gluten-free.
- Chia Seeds: A good source of omega fats and fiber, chia seeds help thicken the oat mixture, creating an almost pudding-like consistency. Wihtout them, the oats turn out thin and runny.
- Milk: Unsweetened almond milk is my preferred milk for overnight oats, but any regualr or non-dairy milk will work. The higher the fat percentage, the richer and creamier your oats will be.
- Greek Yogurt: This adds protein and helps thicken the oats. I prefer plain or vanilla Greek yogurt to avoid overpowering the flavor of the rest of the ingredients. If needed, use a dairy-free yogurt alternative.

- Want to make your apple cinnamon overnight oats even more filling? Feel free to stir in a scoop of your favorite whey or plant-based protein powder. I recommend vanilla flavors so you can still taste the apple cinnamon goodness.

How to Make Apple Cinnamon Overnight Oats
One of my favorite things about overnight oats is that they’re virtually foolproof. Even easier than cooking oatmeal on the stovetop or even making microwave oats, they come together in minutes. Here’s how I make this version:
- Create the “filling.” To start, I toss the diced apples with vanilla, cinnamon, and maple syrup and microwave them until they’re nice and soft. You can skip this step, but I find it really enhances the flavor of the apples and improves their texture once chilled. If they aren’t microwaved, they stay crunchy.
- Combine and chill. Next, mix all the ingredients in a jar or container, and transfer the oats to the fridge to thicken. If you can, I highly recommend letting the oats chill overngiht for the best texture!
- Enjoy! The next morning, give your oats a quick stir, and enjoy cold.
Note: Prefer warm oats? Pop them in the microwave before serving!
My Favorite Ways to Serve
Honestly, these apple overnight oats are delicious on their own (with a cup of coffee, of course). But you can never go wrong with toppings, right? Some of my favorite additions include extra Greek yogurt, chopped apples, protein granola, chopped nuts, or coconut flakes.
If I’m feeling really hungry, I pair my oats with a savory option like hard-boiled eggs or my asparagus mushroom frittata for even more protein.

- 1 Large Mason Jar or Airtight Container
Ingredients
- 1 large apple chopped
- 2 teaspoons vanilla extract divided
- 2 teaspoons ground cinnamon divided
- 2 Tablespoons maple syrup divided, plus more to taste
- ½ cup (40 grams) rolled oats
- 2 Tablespoons chia seeds
- 1 cup unsweetened almond milk
- ½ cup plain Greek yogurt
Instructions
- In a bowl, toss the chopped apple with 1 teaspoon of vanilla extract, 1 teaspoon of ground cinnamon, and 1 Tablespoon of maple syrup.1 large apple, 2 teaspoons vanilla extract, 2 teaspoons ground cinnamon, 2 Tablespoons maple syrup
- Microwave the apple mixture for 1 minute or until the apples are soft. Set aside.
- In a large mason jar or airtight container, add the oats, chia seeds, unsweetened almond milk, Greek yogurt, and remaining vanilla, cinnamon, and maple syrup. Stir to combine.½ cup (40 grams) rolled oats, 2 Tablespoons chia seeds, 1 cup unsweetened almond milk, ½ cup plain Greek yogurt
- Fold in the apple mixture.
- Cover and refrigerate for at least 6 hours or ideally overnight.
- Stir to distribute the ingredients, add any toppings of choice, and getcha some of that!
