Apple Cinnamon Overnight Oats

Ingredients
  

  • 1 large apple chopped
  • 2 teaspoons vanilla extract divided
  • 2 teaspoons ground cinnamon divided
  • 2 Tablespoons maple syrup divided, plus more to taste
  • ½ cup (40 grams) rolled oats
  • 2 Tablespoons chia seeds
  • 1 cup unsweetened almond milk
  • ½ cup plain Greek yogurt

Instructions
 

  • In a bowl, toss the chopped apple with 1 teaspoon of vanilla extract, 1 teaspoon of ground cinnamon, and 1 Tablespoon of maple syrup.

  • Microwave the apple mixture for 1 minute or until the apples are soft. Set aside.
  • In a large mason jar or airtight container, add the oats, chia seeds, unsweetened almond milk, Greek yogurt, and remaining vanilla, cinnamon, and maple syrup. Stir to combine.

  • Fold in the apple mixture.
  • Cover and refrigerate for at least 6 hours or ideally overnight.
  • Stir to distribute the ingredients, add any toppings of choice, and getcha some of that!

Notes

Storage: Leftovers will stay fresh in the fridge for up to 5 days. Give them a good stir before serving, and keep in mind that the longer they sit, the mushier they will be.
