We love a good baked tilapia, steelhead trout, or steak recipe. However, we make this baked chicken breast recipe pretty much every week. It’s a staple in our meal prep routine. Not only is it tasty and one of the most budget-friendly protein sources out there, but it’s easy to adjust to fit all our dietary needs. 

Plus, we can mix and match different seasonings and sauces to switch up the flavor so we never get bored. With this quick oven baked method, the chicken always comes out tender and juicy so you’ll never have to chew through bland, tough chicken again. You might even enjoy hitting your protein goals!

  • Boneless Skinless Chicken Breast – Feel free to use bone-in chicken breasts, or substitute chicken thighs if preferred. Just make sure to adjust teh baking time as needed. 
  • Seasonings – We keep things simple, using salt, garlic powder, and McCormick chipotle roasted garlic seasoning for a hint of spice. 

🧂 How to Make Baked Boneless Chicken Breast Recipe for Meal Prep

Before you begin, preheat the oven to 450 degrees Fahrenheit. Then, line a baking sheet with aluminum foil, and grease it lightly with cooking oil. 

  1. Season. Season the chicken on both sides. Arrange them in a single layer on the prepared baking sheet, leaving space between each piece. 
  2. Bake. Transfer the seasoned chicken breasts to the oven, and bake until it’s no longer pink. 
  3. Rest. Let the chicken rest for at least ten minutes. Then, slice, and getcha some of that!

👨🏻‍🍳 Tips for Perfectly Cooked Chicken

  • Look for even-sized chicken pieces, or cut them into equal pieces, about ½ inch in size. This promotes even cooking. 
  • Adjust the baking time depending on your oven and the size of the chicken. 
  • Use an instant-read thermometer to ensure the chicken reaches an internal temperature of 165 degrees Fahrenheit, meaning it’s fully cooked and safe to eat. 
  • Don’t skip the resting! This allows the juices to redistribute, keeping the chicken moist and juicy.

  • Use any seasonings you have on hand. Lemon pepper, Cajun, Italian seasonings, an all-purpose blend, or single spices like onion powder, cayenne, smoked paprika, etc. all work. 
  • Add a sauce such as a barbecue, teriyaki, buffalo, or ranch. 
  • Sprinkle lemon juice on top. 
  • Add fresh parsley or cilantro.

There’s seriously nothing this meal prep chicken breast recipe doesn’t pair well with. We typically portion four to six ounces in meal prep containers with cooked quinoa or Basmati rice and sautéed zucchini or even broccoli salad for grab-and-go meals throughout the week. 

However, it’s great with baked potatoes, fries, salads, burritos, quesadillas, tacos, egg scrambles, roasted veggies, or whatever you have on hand.

Ingredients
  

  • Cooking spray
  • 5 pounds boneless skinless chicken breast
  • 2 teaspoons garlic powder or to taste
  • 1 teaspoon kosher salt
  • 2 teaspoons McCormick chipotle roasted garlic seasoning or to taste*

Instructions
 

  • Preheat the oven to 450°F. Line the baking sheet with aluminum foil, and lightly grease with cooking oil spray.

  • Arrange the chicken breasts on the prepared baking sheet, and lightly spray them with cooking oil.

  • Sprinkle the seasonings evenly on both sides of the chicken pieces.
    2 teaspoons garlic powder, 1 teaspoon kosher salt, 2 teaspoons McCormick chipotle roasted garlic seasoning or to taste*
  • Bake for 30-35 minutes or until the chicken reaches an internal temperature of 165°F.
  • Rest for 10-15 minutes.
