Peaches and Cream Overnight Oats

These peaches and cream overnight oats were inspired by my favorite lemon blueberry overnight oats. Now, I can’t decide which I like better. The perfect way to use up ripe peaches, these oats are thick, creamy, sweet, and super filling. Even better, they’re super easy to whip up, requiring about 5 minutes of prep time total. Just toss everything together and let the fridge do the hard work. All I have to do is give the oats a quick stir in the morning, add a few toppings (or not), and they’re ready to take on-the-go!

  • Foolproof: You can’t mess this one up. No really. There’s no utilizing your oven like when you cook oats on the stovetop. Just mix everything together, and you’re done.

  • Oats: Quick oats work best, but we’ve gotten away with rolled oats, too. Just make sure to avoid steel-cut oats. They won’t absorb the liquid or become soft like we want.
  • Chia Seeds: These are crucial for creating a thick consistency. Flax seeds also work, providing a slightly nuttier taste and grittier consistency.
  • Pudding Mix: Don’t skip this! It’s key to creating the sweet, cheesecake-like flavor we want. If you can’t find cheesecake-flavored pudding mix, vanilla-flavored mixes will give you a similar result.
  • Maple Syrup: This is technically optional but highly recommended for a more dessert-like taste. If preferred, honey also works.
  • Peaches: The star of the show! I use fresh peaches, chopping them up. However, if they aren’t in season or you don’t have access, jarred or canned peaches will work. Just be sure to drain them super well to prevent your oats from being too runny. You’ll also likely want to omit any extra sweeteners if your peaches are packed in sugar syrup.

Mix-Ins and Topping Ideas

I keep this recipe simple, letting the peaches shine through, but feel free to get creative! Try stirring in a scoop of vanilla protein, adding extra milk as needed to combine the ingredients. Or, fold in chopped nuts or white chocolate chips.

Then, top your peaches and cream overnight oats with extra peaches, strawberries, or banana coins. Or, add a drizzle of maple syrup, almond butter, peanut butter, coconut flakes, or whipped cream. Why not?!

These peaches and cream overnight oats are thick, sweet, and taste like dessert while offering lots of nutrients to keep you full! With minimal prep time and no cooking, they're one of my favorite meal prep breakfast recipes, especially in the summer when peaches are at their peak!

Equipment

  • 1 Large Jar with a Lid

Ingredients
  

  • 1/2 cup rolled oats or quick oats
  • 2 Tablespoons chia seeds
  • 2 teaspoons sugar-free cheesecake Jell-O pudding mix
  • 1 cup unsweetened almond milk vanilla or plain
  • 1/2 cup Greek yogurt
  • 1 teaspoon vanilla extract
  • 1-2 Tablespoons maple syrup
  • 1 medium peach

Instructions
 

  • Add all the ingredients to a large container with a lid, and stir to combine.
  • Cover and refrigerate for at least 6 hours or ideally overnight.
  • Stir, add toppings of choice, and getcha some of that!

Notes

Storage: Leftovers will stay fresh in the fridge for up to 5 days. Give them a good stir before serving, and keep in mind that the longer they sit, the mushier they will be.
