Ingredients
  

  • 1 Tablespoon olive oil
  • 2 pounds zucchini sliced into ½-inch coins
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ - 1 teaspoon red pepper flakes
  • 2 garlic cloves minced

Instructions
 

  • Heat oil in a large skillet over medium-high heat.

  • Add the zucchini in a single layer, and cook for 3 minutes, stirring frequently.
    2 pounds zucchini
  • Season with salt, pepper, and red pepper flakes.

  • Cover the skillet, reduce the heat to low, and continue to cook for 2 minutes.
  • Add the garlic, and increase the heat to medium.
    2 garlic cloves
  • Cook 1-2 minutes or until the garlic is fragrant and most of the liquid is evaporated.

Notes

Storage: Transfer leftovers to an airtight container, and store in the fridge for 2-3 days. Reheat in the microwave or in a skillet over medium heat.
