Banana Baked Oatmeal Recipe
This easy banana baked oatmeal recipe is a meal prep breakfast I make on repeat. Thick and chewy with satisfying crunch, it tastes like banana bread but is higher in protein and keeps me full until lunch! Serve it as is or with your favorite toppings.

- 4 large bananas mashed
- 2 cups rolled oats
- 1 scoop protein powder of choice I use BPN peanut butter cookie
- 2 teaspoons ground cinnamon
- ½ teaspoon baking soda
- 1 teaspoon salt
- 1 cup milk
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 Tablespoons maple syrup
- ¼ -⅓ cup chopped walnuts
Preheat the oven to 350°F. Grease a 9x9 baking dish with cooking spray, and set it aside.
In a large bowl, mash the bananas with a fork or potato masher.

Add the remaining ingredients, and stir to combine.
2 cups rolled oats, 1 scoop protein powder of choice, 2 teaspoons ground cinnamon, ½ teaspoon baking soda, 1 teaspoon salt, 1 cup milk, 2 large eggs, 2 teaspoons vanilla extract, 2 Tablespoons maple syrup, ¼ -⅓ cup chopped walnuts
Transfer the oat mixture to the prepared baking dish, and bake for 40-50 minutes or until the oats are set. A toothpick inserted into the center should come out clean!
Cool in the pan, slice into bars, and enjoy!
The riper your bananas, the sweeter your oats will taste. I like to use bananas that are speckled but still fairly firm, finding it results in thicker, sturdier oat bars.
Storage: Once cool, leftover baked oats will keep fresh in an airtight container in the fridge for up to 5 days or in the freezer for up to 3 months. I like to wrap individual portions with plastic wrap to prevent them from clumping together. To serve, thaw your oats in the fridge overnight. Then, warm them in 30-second increments in the microwave.
