I’ve loved carrots for as long as I can remember. That might be because growing up, we always had them roasted and tossed with honey butter, which makes them taste more like dessert than a vegetable. Honestly, that version is still delicious and one I make from time to time. 

However, most days, I lighten things up a bit, using different spices for a sweet and savory taste. No matter what you’re in the mood for, we’ve got a flavor option for you, and the steps are all simple, so your roasted carrots always turn out great so you can confidently say, “Getcha some of that!” when serving guests.

Basic Carrots

  • Carrots
  • Salt and Pepper
  • Olive Oil 
  • Optional Fresh Parsley

Sweet and Spicy 

  • Carrots 
  • Extra Virgin Olive Oil 
  • Seasonings – Salt, chili powder, garlic powder, nutmeg, and ground cinnamon. 

Honey Butter

  • Carrots
  • Honey – Maple syrup will also work. 
  • Unsalted Butter

The great thing about carrots is that they pair well with a variety of seasonings and toppings. Other tasty options include: 

  • Pesto
  • Parmesan Cheese
  • Cilantro, Mint, or Fresh Thyme 
  • Chopped Pistachios

🎉 Tips for Success

  • Always use whole carrots and peel them before you begin. This removes any bitterness and helps them roast evenly. 
  • Slice your carrots at a diagonal, creating smaller pieces to promote faster, even baking. 
  • Spread the carrots in a single layer on your baking sheet, leaving a bit of space between each piece. 
  • Flip the carrots over halfway through roasting to ensure they come out tender on all sides. 
  • Adjust the baking time. Cooking whole carrots in the oven will take quite a bit longer than roasted baby carrots. If using baby carrots, start checking for doneness between 15 minutes and 20 minutes after baking.

Ingredients
  

Basic Carrots

  • 2 pounds whole carrots peeled
  • 1 Tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • Optional fresh parsley for garnish

Sweet and Spicy

  • 2 pounds whole carrots peeled
  • 1 Tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon nutmeg
  • 2 teaspoons ground cinnamon

Honey Butter

  • 2 pounds whole carrots peeled
  • 1 Tablespoon honey or to taste
  • 1 Tablespoon unsalted butter melted

Instructions
 

  • Preheat the oven to 425 degrees Fahrenheit. Line a large baking sheet with aluminum foil, and set aside.
  • Peel the carrots, and slice in half, cutting at an angle.
    2 pounds whole carrots

For the Basic Carrots:

  • Toss the carrots with olive oil, salt, and pepper.
    1 Tablespoon olive oil, 1 teaspoon kosher salt, 1 teaspoon black pepper
  • Arrange in a single layer on the prepared baking sheet.
  • Bake for 45 minutes or until fork-tender, flipping halfway through.
  • Garnish with fresh parsley, if desired.
    Optional fresh parsley

For the Sweet and Spicy Carrots:

  • Toss the carrots with olive oil and seasonings.
    2 pounds whole carrots, 1 Tablespoon olive oil, 1 teaspoon kosher salt, 1 teaspoon chili powder, 1 teaspoon garlic powder, 1 teaspoon nutmeg, 2 teaspoons ground cinnamon
  • Arrange in a single layer on the prepared baking sheet.
  • Bake for 45 minutes or until fork-tender, flipping halfway through.

Honey Butter:

  • Toss the carrots with melted butter and honey.
    2 pounds whole carrots, 1 Tablespoon unsalted butter, 1 Tablespoon honey
  • Arrange in a single layer on the prepared baking sheet.
  • Bake for 45 minutes or until fork-tender, flipping halfway through.
